Lately I'm all into making soup, because it's so darn easy, but always healthy and tasty. So here's another recipe for soup.

It's zucchini & pumpkin soup with stilton ( inspired by this recipe ) - I love cheese, all sorts... even the gooey blue ones, so I was happy to crumble a whole piece of stilton while preparing this soup.

Ingredients:
a buch of zucchini ( I used 3! ) | 2 cups of cubed pumpkin | 2 shallots | chicken stock | stilton cheese | olive oil | salt & pepper to taste

Instructions:
Heat the oil in a large skillet. Add the shallot and stir until slightly softened. I sliced the three zucchini, but you can also cube them. The slices can be pureed easily though.
Add the zucchini slices and the pumpkin along with the chicken stock. Add as much stock to cover all the vegetables.
Bring to a boil and reduce heat. Let simmer for about an hour. Then puree the veggies until smooth ( or course, whatever you like! ) and crumble the stilton. Let the cheese melt and stir through the soup.

Top with salt & pepper and some parsley. Easy huh?!

Either freeze the leftovers or throw away... because the stench is killing the next day!
